Potato Crust

    Prepare the Potatoes

    Preheat the oven to 400°F (200°C). Peel and grate the russet potatoes. Squeeze out excess moisture using a clean kitchen towel.

    Make the Potato Crust

    In a bowl, combine the grated potatoes, olive oil, salt, and black pepper. Mix well. Press the mixture into the bottom of a greased baking dish to form a crust. Bake for 20-25 minutes or until golden and crispy.

    Cook the Couscous

    In a saucepan, bring the vegetable broth to a boil. Add the couscous and remove from heat. Cover and let it sit for 5 minutes, then fluff with a fork.

    In a large skillet, melt the butter over medium heat. Add the minced garlic and diced shallots, cooking until soft. Stir in the cooked couscous and Parmesan cheese, mixing until creamy.

Charred Carrot Lobster Sauce

    In a skillet, heat olive oil over medium-high heat. Add the chopped carrots and cook until charred and tender, about 8-10 minutes.

    Add the lobster stock and heavy cream to the skillet with the carrots. Simmer until thickened, then stir in the lobster meat and season with salt and pepper. Cook for an additional 2-3 minutes.

Cooking the Local Catch

    In a separate pan, melt the butter over medium heat. Season the fish fillets with lemon juice, salt, and pepper. Cook the fillets for 3-4 minutes on each side or until cooked through and flaky.
