Method

Dough Preparation

    Make the Dough

    In a bowl, mix the flour and salt. Gradually add water while kneading until a smooth dough forms. Cover and let it rest for 30 minutes.

Filling Preparation

    Prepare the Filling

    In a large bowl, combine ground pork, chopped shrimp, minced lup cheong, garlic, green onion, soy sauce, sesame oil, salt, and pepper. Mix well.

Potsticker Assembly

    Assemble Potstickers

    Roll out the rested dough and cut into circles. Place a spoonful of filling in the center of each circle, fold in half, and pleat the edges to seal.

Cooking

    Cook the Potstickers

    In a pan, heat oil over medium heat. Place potstickers in the pan and cook until the bottoms are golden brown. Add a splash of water, cover, and steam for 5-7 minutes until fully cooked.

Sauce Preparation

    Make Garlic Aioli

    In a bowl, mix mayonnaise, minced garlic, lemon juice, and salt until smooth.

    Make Korean Chili Vinaigrette

    Whisk together soy sauce, rice vinegar, gochugaru, sesame oil, and honey in a small bowl.
