    Prepare the Base

    In a large paella pan or a wide skillet, heat the olive oil over medium heat. Add the chorizo and Portuguese sausage, cooking until browned. Remove and set aside.

    Sauté Vegetables

    In the same pan, add the chopped onion, bell pepper, and minced garlic. Sauté until the vegetables are soft and fragrant.

    Cook the Rice

    Add the diced tomato, paprika, and saffron to the vegetables. Stir well, then add the short-grain rice, stirring to coat it in the mixture. Pour in the chicken broth and bring to a simmer.

    Add Proteins

    Once the rice starts to absorb the broth, add the chorizo, Portuguese sausage, shrimp, and clams. Stir gently to combine.

    Simmer

    Cover the pan with a lid or aluminum foil and let it simmer on low heat for about 20 minutes, or until the rice is cooked and the clams have opened.

    Season and Serve

    Season with salt and black pepper to taste. Serve with lemon wedges on the side.
