    Sauté the Base

    In a large paella pan or skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, cooking until softened, about 5 minutes.

    Cook the Chicken and Sausage

    Add the chicken pieces and Portuguese sausage to the pan. Cook for about 5-7 minutes until the chicken is browned on all sides.

    Add Peppers and Tomatoes

    Stir in the red and green bell peppers and diced tomatoes. Cook for another 3-4 minutes until the peppers soften.

    Season the Mixture

    Add the saffron, paprika, salt, and black pepper. Mix well to combine all the flavors.

    Incorporate the Rice

    Stir in the rice, ensuring it is evenly distributed in the mixture. Pour in the chicken broth and bring to a boil.

    Simmer

    Reduce the heat to low and cover the pan. Let it simmer for about 15 minutes, without stirring.

    Add Shrimp and Clams

    After 15 minutes, carefully add the shrimp and clams on top of the rice. Cover again and cook for an additional 10 minutes, or until the clams open and shrimp are cooked through.

    Once cooked, remove from heat and let it sit covered for 5 minutes. Garnish with fresh parsley before serving.
