Method
Preparation
- 1
Make the Base
In a large bowl, combine rolled oats, peanut butter, honey (or maple syrup), vanilla extract, and salt. Mix until well combined. Press the mixture into the bottom of a greased 9x9 inch baking dish.
- 2
Prepare the Berry Mixture
In a separate bowl, combine chopped strawberries, blueberries, and raspberries. Layer the berry mixture evenly over the peanut butter base.
- 3
Make the Caramel Sauce
In a small saucepan, combine brown sugar, unsalted butter, and heavy cream. Cook over medium heat, stirring constantly until the mixture comes to a boil. Once boiling, reduce heat and simmer for 2-3 minutes until thickened.
- 4
Assemble
Drizzle the caramel sauce over the berry layer in the baking dish. Use a spatula to gently spread it to ensure even coverage.
- 5
Chill and Serve
Place the baking dish in the refrigerator for at least 2 hours to set. Once set, cut into squares and serve.
