Steak Preparation

Season the Steak
Pat the ribeye steaks dry with paper towels. Season both sides generously with salt and black pepper.

Prepare the Sauce
In a saucepan over medium heat, add cognac and reduce by half. Stir in beef stock and black peppercorns, simmering until reduced by half again. Add heavy cream and butter, whisking until smooth. Season to taste.
Truffle Garlic Mashed Potatoes

Mash the Potatoes
Add butter, heavy cream, minced garlic, and truffle oil to the potatoes. Mash until smooth and creamy. Season with salt to taste.
Vegetable Preparation

Roast the Vegetables
Preheat the oven to 400°F (200°C). Toss green beans and baby carrots with olive oil, salt, and black pepper. Spread on a baking sheet and roast for 20-25 minutes until tender.
