    Mix Dry Ingredients

    In a large bowl, whisk together the glutinous rice flour, baking powder, sugar, and salt until well combined.

    Combine Wet Ingredients

    In another bowl, whisk together the milk, egg, vanilla extract, and melted butter until smooth.

    Combine Mixtures

    Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; a few lumps are fine.

Cooking

    Heat the Pan

    Heat a non-stick skillet or griddle over medium heat and lightly grease with butter.

    Cook Pancakes

    Pour about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface and the edges look set, about 3-4 minutes. Flip and cook for another 2-3 minutes until golden brown.

    Serve

    Serve warm with butter and maple syrup drizzled on top.
