Preparation

    Marinate the Butterfish

    In a bowl, mix the miso paste, mirin, and soy sauce. Coat the butterfish fillets in the marinade and refrigerate for at least 1 hour or overnight for better flavor.

    Cook the Rice

    Rinse the rice under cold water until the water runs clear. Cook rice according to package instructions. Once cooked, let it sit covered for 10 minutes.

    Prepare the Vegetables

    Steam the bok choy until just tender, about 3-4 minutes. Julienne the carrot and set aside. Prepare the lomi tomato by dicing it and combining with a pinch of salt.

Cooking

    Sear the Butterfish

    Preheat a skillet over medium-high heat. Remove the marinated butterfish from the refrigerator and sear each side for 3-4 minutes until caramelized.

    Prepare the Sizzling Soy Vinaigrette

    In a small saucepan, combine soy sauce, rice vinegar, sesame oil, honey, garlic, and ginger. Heat over medium heat until warmed through, then remove from heat.

Plating

    Serve the Dish

    On a plate, serve a scoop of rice, top with the seared butterfish, and arrange the steamed bok choy and julienned carrot beside it. Drizzle with kabayaki sauce and the sizzling soy vinaigrette. Finish with the lomi tomato on the side.
