Mini Shortrib Preparation

    Sear and Braise the Shortribs

    Preheat the oven to 300°F (150°C). Season the short ribs with salt and pepper. In a large ovenproof pot, heat olive oil over medium-high heat. Sear the short ribs on all sides until browned, then remove and set aside.

    Cook Vegetables

    In the same pot, add onion, carrot, celery, and garlic. Cook until the onions are translucent, about 5 minutes.

    Braise

    Add the short ribs back to the pot. Pour in beef broth, soy sauce, and add the bay leaf. Bring to a simmer, cover, and transfer to the oven. Braise for 2-3 hours until fork-tender.

Tempura Market Catch

    Prepare the Tempura Batter

    In a bowl, mix tempura batter mix with cold water until just combined. Do not overmix; lumps are okay.

    Fry the Fish

    Heat vegetable oil in a deep pan to 350°F (175°C). Dip fish fillets in the batter and fry until golden brown, about 3-4 minutes. Remove and drain on paper towels.

    In a skillet, melt butter over medium heat. Crack the eggs into the skillet and cook until the whites are set but the yolks are still runny. Season with salt and pepper.

    In a small saucepan, combine beef jus and fresh herbs. Heat gently to combine.

    Prepare Butter Sauce

    In another small saucepan, melt butter over low heat until bubbly. Pour over the cooked short ribs before serving.
