Soufflé Preparation

    Preheat the Oven

    Preheat your oven to 190°C (375°F). Grease individual ramekins with butter and dust with sugar.

    Melt Chocolate

    In a heatproof bowl, combine bittersweet chocolate and butter. Melt together over a pot of simmering water, stirring until smooth. Remove from heat.

    Prepare Egg Mixture

    In a separate bowl, whisk the eggs and sugar until light and fluffy. Add vanilla extract and mix well.

    Combine Mixtures

    Slowly pour the melted chocolate into the egg mixture while stirring continuously. Sift in flour and salt, and gently fold until just combined.

    Fill Ramekins

    Divide the soufflé mixture evenly among the prepared ramekins. Place them on a baking sheet.

    Bake

    Bake in the preheated oven for 12-15 minutes, or until the tops are set but the centers remain soft.

Raspberry Coulis

    Prepare Coulis

    In a saucepan, combine fresh raspberries, sugar, and water. Cook over medium heat until the raspberries break down and the mixture thickens, about 10 minutes.

    Blend and Strain

    Blend the raspberry mixture until smooth, then strain through a fine mesh sieve to remove seeds.

Serving

    Serve

    Once the soufflés are baked, remove from the oven and let them cool slightly. Serve immediately with raspberry coulis and a scoop of vanilla ice cream.
