Prepare the Chocolate Mixture
Preheat your oven to 375°F (190°C). Melt the dark chocolate and butter together in a double boiler or microwave, stirring until smooth. Let cool slightly.

Fold in Egg Whites
Gently fold the whipped egg whites into the chocolate mixture until just combined. Be careful not to deflate the mixture.

Cook the Mixture
Cook over low heat, stirring constantly, until the mixture thickens and coats the back of a spoon (about 5-7 minutes). Remove from heat and stir in the vanilla bean seeds.

Chill and Churn
Let the mixture cool, then chill in the refrigerator for at least 4 hours or overnight. Churn in an ice cream maker according to the manufacturer's instructions.
