    Prepare the Pineapple

    Preheat the oven to 350°F (175°C). Grease a 9-inch round cake pan. Invert the pan and place the sliced Maui Gold pineapple on the bottom.

    Make the Caramel Base

    In a saucepan, melt 1 cup of unsalted butter over medium heat. Stir in 3 tablespoons of brown sugar until dissolved. Pour this mixture over the pineapple slices in the cake pan.

    Mix the Cake Batter

    In a large bowl, combine 1.5 cups of all-purpose flour, 1 cup of granulated sugar, 1.5 teaspoons of baking powder, and 0.5 teaspoons of salt. In another bowl, whisk together 0.5 cups of milk, 2 eggs, 1 teaspoon of vanilla extract, and the scraped vanilla bean. Mix wet ingredients into the dry ingredients until just combined.

    Bake the Cake

    Pour the batter over the pineapple and caramel mixture in the pan. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.

    Cool and Flip

    Allow the cake to cool for 10 minutes in the pan before inverting it onto a serving platter.

    Prepare the Caramel Sauce

    In a saucepan, combine 1 cup of granulated sugar and cook over medium heat until it melts and turns a golden brown color. Add 6 tablespoons of unsalted butter and stir until melted. Slowly pour in 0.5 cups of heavy cream while stirring continuously. Add 0.25 teaspoons of sea salt and mix well.

    Slice the pineapple upside-down cake and serve warm with a scoop of vanilla bean ice cream and drizzle with caramel sauce.
