Method

Marinating the Fish

    Prepare the Marinade

    In a bowl, mix olive oil, lemon juice, minced garlic, chopped parsley, salt, and black pepper.

    Marinate the Fish

    Place the fish fillets in the marinade, ensuring they are fully coated. Cover and refrigerate for at least 30 minutes.

Cooking the Risotto

    Sauté Aromatics

    In a large saucepan, melt 2 tablespoons of butter over medium heat. Add the chopped onion and minced garlic, sauté until soft.

    Toast the Rice

    Add Arborio rice to the pan, stirring for 2-3 minutes until lightly toasted.

    Add Wine

    Pour in the white wine and cook until it has mostly evaporated.

    Add Broth Gradually

    Begin adding the broth one ladle at a time, stirring continuously until the liquid is absorbed. Repeat until the rice is creamy and al dente.

    Stir in the grated Parmesan cheese, and season with salt and pepper to taste.

    In a small saucepan, melt the butter over low heat.

    Add lobster shells, minced garlic, and lemon zest. Simmer gently for about 10 minutes, allowing the flavors to infuse.

    Strain the butter to remove solids and season with salt to taste.

Cooking the Fish

    In a skillet over medium-high heat, add a little olive oil and cook the marinated fish fillets for about 3-5 minutes on each side or until cooked through.

Plating

    Plate the risotto, top with the cooked fish, and drizzle with lobster butter. Garnish with extra parsley if desired.
