    Prepare Vegetables

    Chop the mushrooms, local tomato, spinach, and Maui onion into small pieces.

    Cook Vegetables

    In a non-stick skillet, sauté the mushrooms and Maui onion in a little olive oil over medium heat until softened. Add the spinach and local tomato, cooking until the spinach wilts.

    Prepare Eggs

    In a bowl, whisk the eggs until well combined. If using egg whites only, use 4 egg whites instead of whole eggs.

    Cook Omelet

    Pour the whisked eggs into the skillet with the sautéed vegetables. Cook until the edges start to set, then gently lift the edges to allow uncooked eggs to flow to the bottom.

    Add Cheese

    Once the omelet is almost set, sprinkle the white cheddar cheese on top and fold the omelet in half. Cook for an additional minute until the cheese melts.

    Serve

    Serve the omelet hot with your choice of starch: toast, hash browns, or rice.
