Crust Preparation

    Make the Crust

    In a bowl, mix together the all-purpose flour, powdered sugar, and salt. Cut in the unsalted butter until the mixture resembles coarse crumbs. Stir in the ice water until the dough comes together. Press the dough into a tart pan and chill for 30 minutes.

    Bake the Crust

    Preheat the oven to 350°F (175°C). Bake the chilled crust for 20-25 minutes or until golden brown. Allow to cool.

Macadamia Nut Jam Preparation

    Prepare the Jam

    In a saucepan, combine chopped macadamia nuts, sugar, lemon juice, and water. Bring to a boil over medium heat, then reduce to a simmer. Cook for about 15 minutes until thickened. Let it cool before spreading on the crust.

Salted Caramel Mousse Preparation

    Make the Caramel

    In a saucepan, heat granulated sugar over medium heat until it melts and turns amber in color. Remove from heat and whisk in the unsalted butter, salt, and 1/2 cup of heavy cream until smooth. Allow to cool slightly.

    Whip the Mousse

    In a bowl, beat the egg yolks and vanilla extract until pale. Gradually add the cooled caramel. In another bowl, whip the remaining heavy cream until stiff peaks form and fold into the caramel mixture. Beat the egg whites until stiff and fold in gently.

    Assemble the Tart

    Spread the macadamia nut jam over the cooled tart crust, then layer the salted caramel mousse on top. Chill in the refrigerator for at least 2 hours before serving.
