Preparation of Crust

    Prepare the Crust

    Preheat the oven to 375°F (190°C). In a food processor, combine macadamia nuts, panko breadcrumbs, butter, parsley, salt, and black pepper. Pulse until the mixture resembles coarse crumbs.

Preparing the Fish

    Prep the Fish

    Rub the Hawaiian whitefish fillets with olive oil, lemon juice, salt, and pepper. Place the fillets on a baking sheet lined with parchment paper.

Baking

    Crust and Bake

    Press the macadamia nut mixture onto the top of each fish fillet. Bake in the preheated oven for 15-20 minutes or until the fish is opaque and flakes easily with a fork.

Making Lobster Essence

    Prepare the Sauce

    In a saucepan, melt butter over medium heat. Add minced garlic and sauté until fragrant. Pour in lobster stock and bring to a simmer. Stir in heavy cream, thyme, salt, and pepper. Reduce heat and let it simmer for about 5-7 minutes until slightly thickened.
