Prepare the Croutons
Preheat your oven to 375°F (190°C). In a bowl, toss the cubed bread with olive oil, minced garlic, dried oregano, salt, and pepper until evenly coated. Spread the bread cubes on a baking sheet in a single layer. Bake for 10-15 minutes or until golden and crispy, stirring halfway through.

Make the Caesar Dressing
In a mixing bowl, combine mayonnaise, minced garlic, lemon juice, grated Parmesan cheese, Worcestershire sauce, salt, and pepper. Whisk until smooth and well combined.

In a large salad bowl, chop the romaine lettuce into bite-sized pieces. Add the grated Manchego cheese and homemade croutons. Drizzle with Caesar dressing to taste and toss gently until everything is well coated.
