Pickling the Tomatoes

    Prepare the Pickling Solution

    In a bowl, mix rice vinegar, soy sauce, salt, and black pepper to create a pickling solution.

    Pickle the Tomatoes

    Chop the Sugarland tomatoes into quarters and add them to the pickling solution. Let them marinate for at least 30 minutes.

Preparing the Mushroom Stack

    Sauté the Mushrooms

    In a pan over medium heat, add a splash of truffle oil and sauté the mushrooms until they are tender and golden brown, about 5-7 minutes.

    Prepare the Avocado

    While the mushrooms are cooking, slice the avocado and season it with a pinch of salt and black pepper.

    Assemble the Stack

    On a plate, layer the sautéed mushrooms, followed by slices of avocado, and top with pickled Sugarland tomatoes. Serve with won ton chips on the side.
