Prepare the Potatoes
Wash and peel the Yukon Gold potatoes. Cut them into thin strips, about 1/4 inch thick.

Soak the Potatoes
Place the cut potatoes in a large bowl of cold water and soak for at least 30 minutes to remove excess starch.

Preheat the Oven
Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.

Dry the Potatoes
Drain the potatoes and pat them dry with a clean kitchen towel.

Season the Potatoes
In a large bowl, toss the dried potatoes with olive oil, salt, black pepper, garlic powder, and paprika until evenly coated.

Bake the Potatoes
Spread the seasoned potatoes in a single layer on the prepared baking sheet. Bake for 25-30 minutes, flipping halfway through, until they are golden brown and crispy.

Add the Cheese
Once the fries are done, remove them from the oven and immediately crumble the Big Island Boursin Goat Feta Cheese over the hot fries.

Garnish and Serve
Sprinkle fresh chives over the loaded fries and serve immediately.
