Prepare Sushi Rice

    Cook the Rice

    Rinse the sushi rice under cold water until the water runs clear. Combine the rice and water in a rice cooker and cook according to the machine's instructions.

    Season the Rice

    In a small bowl, mix together rice vinegar, sugar, and salt until dissolved. Once the rice is cooked, transfer it to a large bowl, and fold in the vinegar mixture gently. Allow it to cool.

Prepare Filling

    Crispy Shrimp

    Prepare crispy shrimp according to package instructions or make homemade by breading and frying shrimp until golden brown.

    Bacon

    Cook bacon until crispy, then crumble into small pieces.

    Avocado

    Slice avocado into thin strips.

Assemble the Roll

    Roll the Sushi

    Place a bamboo sushi mat on a flat surface and lay a sheet of nori on it, shiny side down. Wet your hands and take a handful of sushi rice, spreading it evenly over the nori, leaving about an inch at the top. Layer crispy shrimp, avocado slices, bacon pieces, and mochi crunch in the center.

    Using the bamboo mat, roll the sushi tightly away from you, pressing gently to shape it. Seal the edge with a little water.

Prepare Sauce

    Mix Sauce

    In a small bowl, whisk together soy sauce, honey, and sesame oil.

    Slice and Garnish

    Using a sharp knife, slice the roll into 8 equal pieces. Drizzle with the prepared sauce and sprinkle with sesame seeds and green onion before serving.
