    Prepare Sushi Rice

    Rinse the sushi rice under cold water until the water runs clear. Cook the rice according to package instructions, typically in a rice cooker or on the stovetop. Once cooked, let it cool slightly and mix with rice vinegar, sugar, and salt to taste.

    Slice Hamachi

    Using a sharp knife, slice the hamachi into thin, even strips, about 1/4 inch thick.

    Prepare Pickled Jalapenos

    If the pickled jalapenos are whole, slice them into thin rings or julienne them for easier rolling.

Assembly

    Roll the Sushi

    Lay a sheet of nori on a bamboo sushi mat, shiny side down. Wet your hands and take a handful of sushi rice, spreading it evenly over the nori while leaving a 1-inch border at the top. Layer the hamachi slices and pickled jalapenos in the center of the rice.

    Complete the Roll

    Using the sushi mat, carefully roll the nori away from you, pressing gently to form a tight roll. Once rolled, seal the edge of the nori with a little water.

    Slice the Roll

    Using a sharp, wet knife, slice the roll into 6-8 pieces. Wipe the knife between cuts to ensure clean edges.

Serving

    Garnish and Serve

    Arrange the sushi rolls on a plate. Sprinkle bubu arare on top for crunch. Serve with ponzu sauce for dipping.
