Method
Preparing Sushi Rice

Cook the Sushi Rice
Rinse the sushi rice under cold water until the water runs clear. Combine the rice and water in a rice cooker and cook according to the manufacturer's instructions.

Season the Rice
Once the rice is cooked, transfer it to a large bowl. Mix together rice vinegar, sugar, and salt in a small bowl until dissolved, then fold into the rice gently. Let it cool to room temperature.
Making the Poke

Prepare the Ahi Tuna
Cut the Ahi Tuna into small cubes and place it in a mixing bowl.

Mix the Poke Ingredients
Add the kiawe smoked soy sauce, sesame oil, sliced green onions, sea salt, and chili flakes to the tuna. Gently toss to combine.
Making the Inamona

Prepare the Inamona
In a dry skillet over medium heat, toast the chopped macadamia nuts until golden brown. Remove from heat and mix with sea salt.
Serving the Dish

Assemble the Dish
To serve, place a scoop of sushi rice on a plate, top with the Ahi Poke mixture, and sprinkle with the toasted macadamia nuts (Inamona).
