Burger Preparation

    Prepare the Kiawe Smoked Onions

    In a skillet over medium heat, add olive oil. Once hot, add sliced onions and cook until they're softened and lightly caramelized. Add a pinch of salt and let them smoke for a few minutes. Remove from heat and set aside.

    Cook the Hamakua Mushrooms

    In the same skillet, add a little more olive oil if needed. Add sliced Hamakua mushrooms and sauté until they are tender and browned. Season with salt and pepper to taste. Set aside.

    Form and Cook the Patties

    In a bowl, combine ground beef with salt and pepper. Form into 4 equal patties. Heat a grill or skillet over medium-high heat and cook the patties for about 4-5 minutes on each side or until desired doneness. In the last minute of cooking, place a slice of white cheddar on each patty to melt.

    Assemble the Burgers

    Toast the burger buns on the grill or skillet. Layer each bun with a patty, then top with kiawe smoked onions and sautéed Hamakua mushrooms. Close the burger with the top bun.

    Cook the frozen French fries according to package instructions until golden and crispy.

    Once the fries are cooked, drizzle with truffle oil and toss to coat evenly. Sprinkle with grated Parmesan cheese and chopped parsley before serving.
