    Prepare the Sweet Potatoes

    Peel and cut the sweet potatoes into cubes. Boil them in salted water until tender, about 15-20 minutes. Drain and set aside.

    Prepare the Market Vegetables

    Chop the market vegetables into bite-sized pieces. Toss them with olive oil, salt, and pepper.

Cooking the Fish

    Season the Fish

    Rub the Monchong fillets with olive oil, salt, and black pepper. Coat with fresh herbs.

    Sear the Fish

    Heat a skillet over medium-high heat. Once hot, add the Monchong fillets and sear for 3-4 minutes on each side, or until cooked through.

Finishing Touches
