Prepare the Sweet Potatoes
Peel and cube the sweet potatoes. Boil them in salted water until tender, about 15 minutes. Drain and mash with a little olive oil and salt to taste.

Sauté the Market Vegetables
In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped market vegetables and sauté until tender, about 5-7 minutes. Season with salt and pepper.

Prepare the Fish
Pat the fish fillets dry and season both sides with salt, black pepper, and chopped fresh herbs. Drizzle with olive oil.

Sear the Fish
In a separate skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the fish fillets and sear for about 3-4 minutes on each side, or until cooked through and flaky.

Serve
On each plate, place a scoop of mashed sweet potato, top with sautéed market vegetables, and add the herb-seared fish. Drizzle with lemon juice and additional olive oil if desired.
