Prepare the Prime Ribeye

    Season the Ribeye

    Pat the prime ribeye dry with paper towels. Rub it with olive oil, salt, black pepper, rosemary, and thyme. Let it sit at room temperature for about 30 minutes.

    Grill the Ribeye

    Preheat the grill to high heat. Grill the ribeye for about 4-5 minutes on each side for medium-rare, or until desired doneness. Remove from grill and let it rest for 10 minutes before slicing.

Caramelize Shallots

    Cook the Shallots

    In a skillet, melt butter over medium heat. Add sliced shallots and cook until they are soft and golden brown, about 10-15 minutes. Stir in balsamic vinegar, salt, and pepper, and cook for an additional 2 minutes.

Prepare Green Beans

    Sauté the Green Beans

    In a pot of boiling salted water, blanch the green beans for 3-4 minutes. Drain and transfer to an ice bath. In a skillet, heat olive oil, add minced garlic, and sauté until fragrant. Add the green beans and toss to coat. Season with salt and pepper to taste.

Make Au Gratin Potatoes

    Layer Potatoes

    Preheat the oven to 375°F (190°C). In a greased baking dish, layer half of the sliced potatoes. Sprinkle with salt, pepper, and nutmeg. Pour half of the heavy cream and top with half of each cheese. Repeat the layers with the remaining potatoes, cream, and cheese.

    Bake

    Cover the dish with foil and bake for 45 minutes. Remove the foil and bake for an additional 15 minutes or until the top is golden and bubbly.
