Fillet Mignon Preparation

    Herb Crust Preparation

    Finely chop the fresh herbs and mix with olive oil, salt, and black pepper. Rub this mixture all over the fillet mignon pieces.

    Searing the Fillet

    Heat a skillet over medium-high heat. Add a little olive oil and sear the herb-crusted fillet mignon for about 3-4 minutes on each side for medium-rare. Remove and let rest.

Demi Glace Butter Sauce Preparation

    Making the Sauce

    In the same skillet, lower the heat and add minced shallots. Sauté until translucent, then add the demi-glace and red wine. Reduce until slightly thickened, then whisk in the butter until melted and smooth.

Truffle Mash Potato Preparation

    Cooking the Potatoes

    Boil the chopped potatoes in salted water until tender, about 15-20 minutes. Drain and return to the pot.

    Mashing the Potatoes

    Add heavy cream, truffle oil, salt, and pepper to the potatoes. Mash until smooth and creamy.

Roasted Market Vegetables Preparation

    Roasting the Vegetables

    Preheat the oven to 400°F (200°C). Toss the mixed vegetables with olive oil, salt, and pepper. Spread on a baking sheet and roast for 20-25 minutes until tender and slightly caramelized.
