Preparation

Pickle the Radish

In a bowl, combine sliced radishes, rice vinegar, sugar, and salt. Mix well and let sit for at least 30 minutes to pickle.

Prepare Garlic Soy Dressing

In a small bowl, whisk together soy sauce, minced garlic, and sesame oil. Set aside.

Prepare Orange Dressing

In another small bowl, mix together orange juice and orange zest. Set aside.

Assembly

Slice the Hamachi

Using a sharp knife, thinly slice the hamachi and arrange the slices on a serving plate.

Add Chirashi Relish

Top the hamachi with diced cucumber, julienned carrot, diced avocado, and toasted sesame seeds.

Drizzle Dressings

Drizzle the garlic soy dressing and orange dressing over the hamachi and relish.

Finish with Pickled Radish

Place the pickled radish slices on top and around the dish for garnish.
