Method

Prepare the Lamb Chops

Marinate and Grill

Season lamb chops with salt and black pepper. Heat olive oil in a grill pan over medium-high heat. Grill lamb chops for 4-5 minutes on each side, or until desired doneness is reached.

Make the Cognac Peppercorn Demi-Glace

Prepare the Sauce

In a saucepan, sauté shallots in butter until translucent. Add cognac and cook until reduced by half. Pour in beef stock and green peppercorns, simmer until sauce thickens. Strain if desired.

Prepare the Truffle Garlic Mashed Potatoes

Cook and Mash

Boil cubed potatoes until tender. Drain and return to pot. Add heavy cream, truffle oil, minced garlic, and salt. Mash until smooth and creamy.

Roast the Vegetables

Roast Carrots and Green Beans

Preheat the oven to 400°F (200°C). Toss baby carrots and green beans with olive oil, salt, and pepper. Spread on a baking sheet and roast for 20-25 minutes or until tender.
