Method

Prepare the Brownie Base

Melt Butter and Mix Sugars

Preheat your oven to 350°F (175°C). In a saucepan, melt the butter over medium heat. Stir in the brown sugar and granulated sugar until well combined.

Add Eggs and Vanilla

Remove from heat and let cool slightly. Whisk in the eggs one at a time, followed by the vanilla extract.

Combine Dry Ingredients

In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry mixture to the wet ingredients, stirring until just combined.

Bake

Pour the brownie batter into a greased 9x13 inch baking pan. Bake for 25-30 minutes or until a toothpick inserted comes out clean. Let cool.

Make the Haupia Topping

Cook Haupia Mixture

In a saucepan, whisk together the coconut milk, cornstarch, and sugar. Cook over medium heat, stirring constantly until the mixture thickens. Remove from heat and stir in the vanilla extract.

Spread on Brownies

Once the brownies have cooled, pour the haupia mixture over the top and spread evenly. Chill in the refrigerator until set.

Prepare the Chocolate Drizzle

Melt Chocolate

In a microwave-safe bowl, combine the dark chocolate chips and coconut oil. Microwave in 30-second intervals, stirring in between until smooth.

Drizzle

Drizzle the melted chocolate over the chilled haupia brownies before serving.

Serve

Cut the haupia blond brownies into squares and serve warm with a scoop of vanilla ice cream on top.
