Coconut Crème Brûlée

Method

Preparation Steps

  1. 1

    Prepare the Custard

In a saucepan, combine coconut milk and heavy cream over medium heat. Add granulated sugar and salt, stirring until dissolved. Remove from heat.

  2. 2

    Mix Egg Yolks

In a bowl, whisk together egg yolks and vanilla extract until well combined.

  3. 3

    Combine Mixtures

Slowly pour the warm coconut cream mixture into the egg yolks while whisking continuously to temper the eggs.

  4. 4

    Bake

Pour the custard into ramekins and place them in a baking dish. Fill the baking dish with hot water until it reaches halfway up the sides of the ramekins. Bake at 160°C (320°F) for 30-35 minutes or until set.

  5. 5

    Cool and Chill

Remove from the oven and let cool at room temperature. Refrigerate for at least 2 hours before serving.

  6. 6

    Caramelize the Sugar

Before serving, sprinkle brown sugar evenly over the top of each custard. Using a kitchen torch, caramelize the sugar until it forms a crispy crust.

  7. 7

    Serve

Garnish with mixed fresh berries and serve immediately.
