Grilling the Fish

    Marinate the Fish

    In a bowl, mix olive oil, salt, black pepper, and lemon juice. Coat the fish fillets with the marinade and let sit for 15 minutes.

    Preheat the grill to medium-high heat. Place the marinated fish on the grill and cook for 4-5 minutes on each side, or until cooked through and flaky.

Cooking the Rice

    Prepare the Rice

    Rinse the rice under cold water until the water runs clear. In a saucepan, combine the rinsed rice, water, and salt. Bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes or until the rice is tender.

Preparing the Vegetables

    Sauté the Vegetables

    In a skillet, heat olive oil over medium heat. Add the sliced zucchini, bell peppers, and carrots. Season with salt and pepper, and sauté for about 5-7 minutes until tender but still crisp.

Making the Ponzu Sauce

    In a small bowl, whisk together soy sauce, citrus juice, rice vinegar, mirin, sesame oil, and chopped green onions. Set aside.

Serving

    Serve the grilled fish over a bed of white rice, topped with sautéed garden vegetables, and drizzle with ponzu sauce.
