Prepare the Fish

    Marinate the Fish

    In a bowl, mix olive oil, lemon juice, minced garlic, salt, black pepper, and fresh herbs. Add the fish fillets and coat them well. Let them marinate for at least 30 minutes.

    Grill the Fish

    Preheat the grill to medium-high heat. Place the marinated fish fillets on the grill and cook for about 4-5 minutes on each side, or until the fish is cooked through and flakes easily with a fork.

Prepare the Roasted Vegetables

    Roast the Vegetables

    Preheat the oven to 425°F (220°C). In a large bowl, combine bell peppers, zucchini, and red onion. Drizzle with olive oil, season with salt, black pepper, and dried oregano. Toss to coat evenly. Spread the vegetables on a baking sheet in a single layer and roast for 20-25 minutes, stirring halfway, until they are tender and slightly charred.

Prepare the Steamed Rice

    Cook the Rice

    In a saucepan, combine rice, water, and salt. Bring to a boil over high heat. Once boiling, reduce the heat to low, cover, and simmer for about 15-20 minutes, or until the rice is tender and the water is absorbed. Remove from heat and let it sit covered for 5 minutes before fluffing with a fork.
