Souffle Preparation

    Blend the Raspberries

    In a blender, puree the frozen raspberries until smooth. Strain through a fine mesh sieve to remove seeds, if desired.

    Mix Raspberry Puree

    In a bowl, combine the raspberry puree, Grand Marnier, and sugar. Mix well.

    Whip Egg Whites

    In a separate bowl, whip the egg whites until stiff peaks form. Gently fold the raspberry mixture into the egg whites.

    Whip Cream

    In another bowl, whip the cream with vanilla extract until soft peaks form. Fold the whipped cream into the raspberry-egg white mixture.

    Chill the Souffle

    Pour the mixture into individual souffle dishes or a large bowl. Cover and freeze for at least 4 hours or until set.

Orange Compote Preparation

    Prepare Oranges

    Peel the oranges, removing all the white pith. Cut the segments out of the membranes and collect the juice.

    Make the Compote

    In a small saucepan, combine the orange segments, collected juice, sugar, lemon juice, and orange zest. Cook over medium heat for about 5-7 minutes until the mixture thickens slightly.

    Cool the Compote

    Remove from heat and let cool. Serve chilled or at room temperature with the souffle.
