Prepare the Potatoes
Wash and peel the Russet potatoes. Cut them into even sticks, about 1/4 inch thick. Soak the potato sticks in cold water for at least 30 minutes to remove excess starch, then drain and pat dry.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C). You can check the temperature with a thermometer or drop a small piece of potato to see if it sizzles.

Fry the Potatoes
Carefully add the potato sticks to the hot oil in batches. Fry for about 5-7 minutes, or until golden brown and crispy. Remove them with a slotted spoon and drain on paper towels.

Season the Fries
Once the fries are drained, while they are still hot, drizzle them with truffle oil, then sprinkle with grated Parmesan cheese, fresh thyme leaves, salt, and pepper to taste. Toss to combine.

Serve the fries immediately, garnished with additional Parmesan and thyme if desired.
