Braised Short Ribs

    Sear the Ribs

    Preheat the oven to 300°F (150°C). Season the short ribs with salt and pepper. In a large oven-safe pot, heat olive oil over medium-high heat. Sear the ribs on all sides until browned, then remove and set aside.

    Sauté Vegetables

    In the same pot, add onion, carrot, celery, and garlic. Sauté until softened, about 5 minutes.

    Braise the Ribs

    Add the beef broth, red wine, thyme, and bay leaves. Return the ribs to the pot. Bring to a simmer, cover, and transfer to the oven. Braise for 3 hours until tender.

    Cook the Vegetables

    In a skillet, melt butter over medium heat. Add baby carrots, zucchini, and radishes. Season with salt and pepper. Sauté for about 10-15 minutes until tender.

Mashed Potatoes

    Prepare the Potatoes

    Boil the potatoes in salted water until fork-tender, about 20 minutes. Drain and return to the pot.

    Mash and Season

    Add butter and cream to the potatoes. Mash until smooth and season with salt and pepper.

Honey Mustard Glaze

    Make the Glaze

    In a small bowl, mix honey, mustard, apple cider vinegar, salt, and pepper. Brush the glaze over the short ribs before serving.
