    Roast the Tomatoes

    Preheat your oven to 400°F (200°C). Toss the cherry tomatoes with 1 tablespoon of olive oil, salt, and pepper. Spread them on a baking sheet and roast for 20 minutes until they are soft and slightly caramelized.

    Cook the Bacon

    In a skillet over medium heat, cook the bacon slices until crispy, about 5-7 minutes. Remove from the skillet and let drain on paper towels. Once cooled, chop into pieces.

    Boil the Eggs

    In a saucepan, cover the eggs with water and bring to a boil. Once boiling, cover and remove from heat. Let sit for 10-12 minutes. Transfer eggs to an ice bath to cool. Once cool, peel and slice.

    Prepare the Salad

    In a large bowl, combine mixed greens, roasted tomatoes, bacon, and sliced avocado. Squeeze the juice from the yuzu orange over the salad. Drizzle with remaining olive oil, and season with additional salt and pepper to taste. Toss gently to combine.

    Serve

    Top the salad with sliced boiled eggs and serve immediately.
