Cooking Instructions

  1. 1

    Prepare the Sausage

In a large pot, heat olive oil over medium heat. Add the sliced Portuguese sausage and spicy chorizo. Cook until browned and fragrant, about 5 minutes.

  2. 2

    Add Aromatics

Stir in the minced garlic and diced tomato. Cook for another 2-3 minutes until the tomato softens.

  3. 3

    Incorporate the Rice

Add the Arborio rice to the pot, stirring well to coat the rice with the oil and flavors. Cook for 1-2 minutes.

  4. 4

    Add Broth and Cook

Pour in the chicken broth and bring to a simmer. Season with salt and black pepper. Reduce heat to low, cover, and let it cook for about 15 minutes.

  5. 5

    Add Seafood

After 15 minutes, add the shrimp and clams to the pot. Stir gently and cover again. Cook for an additional 5-7 minutes, until the shrimp are opaque and the clams have opened.

  6. 6

    Finish and Serve

Remove from heat and let it sit for 5 minutes. Garnish with fresh parsley before serving. Enjoy your delicious Paella Rice Stew!
