Cooking Instructions

  1. 1

    Prepare the Base

In a large paella pan or skillet, heat olive oil over medium heat. Add chopped onion and sauté until translucent, about 5 minutes. Add minced garlic and chorizo, cooking until the chorizo is browned.

  2. 2

    Add Tomatoes and Spices

Stir in the diced tomatoes, paprika, saffron, salt, and black pepper. Cook for another 5 minutes until the mixture is well combined and heated through.

  3. 3

    Add Rice and Broth

Add the basmati rice to the pan, stirring to coat the rice with the tomato mixture. Pour in the chicken broth and bring to a simmer. Do not stir after this point.

  4. 4

    Add Seafood

Once the rice is simmering, arrange the shrimp and clams on top of the rice. Cover the pan with a lid or foil and reduce the heat to low. Cook for about 15-20 minutes, or until the rice is tender and has absorbed most of the liquid.

  5. 5

    Finish and Serve

Remove the pan from heat and let it sit covered for an additional 5 minutes. Uncover, garnish with chopped parsley, and serve with lemon wedges.
