Smoked Tomato Bacon Nage

Method

Preparing the Pork Chops

  1. 1

    Prepare the Filling

In a bowl, combine cream cheese, mozzarella, parmesan, parsley, cumin, salt, and pepper. Mix well and set aside.

  2. 2

    Stuff the Pork Chops

Cut a pocket in each pork chop and stuff with the cheese filling. Secure with toothpicks if necessary.

  3. 3

    Sear the Pork Chops

Heat olive oil in a skillet over medium heat. Sear the pork chops for 4-5 minutes per side until golden brown.

Making the Ewa Sweet Corn Polenta

  1. 4

    Cook the Polenta

In a pot, bring milk to a simmer. Gradually whisk in cornmeal and cook until thickened, about 5-7 minutes. Stir in corn, butter, and salt.

Preparing the Smoked Tomato Bacon Nage

  1. 5

    Cook the Bacon

In a saucepan, cook diced bacon until crispy. Add cherry tomatoes and cook for 2-3 minutes.

  2. 6

    Make the Nage

Add chicken broth and smoked paprika to the saucepan. Simmer for 10 minutes, then stir in fresh basil.

Final Assembly

  1. 7

    Combine and Serve

Plate the sweet corn polenta, top with stuffed pork chop, and drizzle with smoked tomato bacon nage. Serve hot.
