For the Crispy Zucchini

    Prepare the Zucchini

    Slice the zucchini into thin rounds or sticks. Place them in a bowl and sprinkle with salt. Let them sit for 15 minutes to draw out excess moisture.

    Make the Batter

    In a mixing bowl, combine all-purpose flour, cornstarch, baking powder, salt, black pepper, and cold sparkling water. Whisk until smooth.

    Fry the Zucchini

    Heat vegetable oil in a deep skillet over medium-high heat. Dip the zucchini pieces into the batter, then carefully drop them into the hot oil. Fry until golden brown and crispy, about 3-4 minutes. Remove and drain on paper towels.

For the Cilantro X.O. Relish

    Combine Ingredients

    In a bowl, mix together the fresh cilantro, X.O. sauce, lime juice, minced garlic, and salt until well combined. Set aside.

For the Bao Buns

    Make the Dough

    In a bowl, combine all-purpose flour, instant yeast, sugar, and baking powder. Gradually add warm water and knead until a smooth dough forms. Let it rise in a warm place for about 1 hour.

    Steam the Buns

    Divide the dough into small pieces, shape into buns, and place them on parchment paper. Steam for about 10-12 minutes until fluffy.
