Preparation and Cooking

    Preparing the Calamari

    In a large bowl, combine the flour, cornstarch, salt, and black pepper. Toss the calamari rings in the mixture until fully coated.

    Frying the Calamari

    Heat oil in a deep skillet or fryer to 375°F (190°C). Fry the calamari in batches for 2-3 minutes, or until golden brown and crispy. Remove and drain on paper towels.

    Crisping the Capers

    In a separate small pan, add a little oil and heat over medium. Add the capers and fry until crispy, about 2-3 minutes. Drain on paper towels.

    Sprinkle the fried calamari with grated Parmesan cheese and drizzle with truffle oil. Top with crispy capers before serving.
