Preparation of Pork Belly

Prepare Pork Belly
Preheat your smoker or oven to 225°F (107°C). Cut the pork belly into 1-inch cubes. In a bowl, mix brown sugar, paprika, garlic powder, onion powder, and cayenne pepper. Rub this mixture all over the pork belly pieces.

Smoke or Bake
Place the pork belly cubes in the smoker or on a baking tray in the oven. Smoke or bake for about 2-3 hours until they are tender.

Add BBQ Sauce
Once cooked, toss the pork belly in BBQ sauce and return them to the heat for an additional 30 minutes.

Roast Brussels Sprouts
While the pork belly is cooking, preheat your oven to 400°F (200°C). Trim the Brussels sprouts and cut them in half. Toss them with olive oil, salt, and black pepper. Spread them on a baking sheet and roast for about 20-25 minutes until crispy and golden.

Combine and Serve
On a serving platter, arrange the roasted Brussels sprouts and top with the pork belly burnt ends. Drizzle with the citrus balsamic glaze and sprinkle with chopped macadamia nuts and sliced green onions.
