Cake Preparation

Melt Chocolate and Butter
In a heatproof bowl, melt dark chocolate and butter over a pot of simmering water. Stir until smooth and set aside to cool slightly.

Combine Dry Ingredients
In another bowl, mix flour and baking powder. Gradually add to the wet mixture, folding in gently until just combined. Fold in toffee bits.

Bake the Cake
Preheat the oven to 180°C (350°F). Pour the batter into a greased cake pan and bake for 25-30 minutes or until a toothpick comes out clean. Let it cool completely.
Mousse Preparation

Prepare Gelatin
In a small bowl, dissolve gelatin in water and let it sit for about 5 minutes.

Whip Cream
In a mixing bowl, whip the heavy cream and powdered sugar until soft peaks form. Gradually add the dissolved gelatin and vanilla extract while continuing to whip until stiff peaks form.

Combine with Cake
Once the cake is cooled, spread the mousse on top of the cake evenly. Refrigerate for at least 2 hours to set.

Slice the mousse cake and serve with mixed berries, raspberry puree, chocolate sauce, and a dollop of whipped cream on the side.
