Preparing the Spring Rolls

    Mix the Filling

    In a large bowl, combine the shredded chicken, carrot, cabbage, green onions, minced garlic, soy sauce, sesame oil, salt, and pepper. Mix well to combine.

    Assemble the Spring Rolls

    Take a spring roll wrapper and place about 2-3 tablespoons of the filling in the center. Fold the sides in and roll tightly from the bottom to the top. Seal the edge with a little water.

    Fry the Spring Rolls

    Heat oil in a deep frying pan over medium heat. Fry the spring rolls in batches until golden brown and crispy, about 3-4 minutes on each side. Drain on paper towels.

Making the Pineapple Chili Sauce

    Combine Ingredients

    In a small saucepan, combine the chopped pineapple, red chili flakes, sugar, rice vinegar, soy sauce, minced garlic, and salt. Mix well.

    Cook the Sauce

    Bring the mixture to a simmer over medium heat. Cook for about 10 minutes, stirring occasionally, until the sauce thickens slightly.

    Cool and Serve

    Remove from heat and let the sauce cool before serving alongside the spring rolls.
