Cooking the Omelet

    Prepare Ingredients

    Chop the bacon, Portuguese sausage, and Spam into small pieces. Set aside the Lomi-Lomi tomatoes and shredded white cheddar cheese.

    Cook the Meats

    In a non-stick skillet over medium heat, cook the bacon until crispy. Add the chopped Portuguese sausage and Spam, cooking until browned. Remove meats from skillet and set aside.

    Make the Omelet

    In a bowl, whisk the eggs until combined. Pour the eggs into the skillet and cook until the edges start to set. Carefully lift the edges with a spatula to allow uncooked egg to flow underneath.

    Add Fillings

    Once the omelet is mostly set, sprinkle the cooked meats, shredded white cheddar, and Lomi-Lomi tomatoes over one half of the omelet.

    Fold and Serve

    Carefully fold the omelet in half over the fillings and let cook for another minute until the cheese melts. Serve hot with your choice of starch.
