Method

Butter Mochi Preparation

    Preheat Oven

    Preheat your oven to 350°F (175°C). Grease an 8x8 inch baking pan.

    Mix Dry Ingredients

    In a large bowl, whisk together the sweet rice flour, sugar, and baking powder.

    Combine Wet Ingredients

    In a separate bowl, mix the melted butter, coconut milk, eggs, and vanilla extract until well combined.

    Combine Mixtures

    Pour the wet mixture into the dry ingredient mixture and stir until just combined.

    Bake

    Pour the batter into the greased baking pan and bake for 50-60 minutes or until a toothpick comes out clean.

    Cool

    Allow to cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.

Candied Pecans Preparation

    Prepare Pecans

    In a skillet over medium heat, combine pecans, sugar, cinnamon, and salt. Stir until the sugar melts and coats the pecans.

    Cool Pecans

    Transfer the pecans to a parchment-lined baking sheet and let them cool completely.

Chocolate Sauce Preparation

    Make Chocolate Sauce

    In a small saucepan, heat the heavy cream over medium heat until it's just about to simmer. Remove from heat and stir in the chocolate chips and vanilla extract until smooth.

Assembly

    Serve

    Cut the butter mochi into squares. Plate with a piece of butter mochi, a scoop of vanilla ice cream, drizzle with chocolate sauce, and top with candied pecans.
