Method

Make the Pesto

    Prepare the Ingredients

    In a food processor, combine the basil leaves, pine nuts, garlic cloves, and Parmesan cheese.

    Blend the Pesto

    While the processor is running, slowly drizzle in the olive oil until a smooth consistency is reached. Season with salt and black pepper to taste.

Prepare the Tomato Salad

    Combine Ingredients

    In a bowl, combine the diced Hau’ula tomatoes, sliced red onion, balsamic vinegar, and olive oil.

    Season

    Toss everything together and season with salt and black pepper to taste. Let it sit for about 10 minutes to allow the flavors to meld.

Assemble the Dish

    Plate the Burrata

    On a serving platter, place the burrata cheese in the center.

    Add Pesto and Salad

    Spoon the herb pesto over the burrata and arrange the tomato salad around it.

    Serve with Focaccia

    Serve with slices of Ohia Bakery focaccia and drizzle lavender honey over the top for a sweet finish.
