Braised Short Ribs

    Sear the Ribs

    In a large pot, heat olive oil over medium-high heat. Season short ribs with salt and pepper, then sear them until browned on all sides. Remove and set aside.

    Sauté Aromatics

    In the same pot, add chopped onion and garlic. Sauté until softened and fragrant.

    Braise the Ribs

    Return the short ribs to the pot. Add beef broth, soy sauce, and bay leaves. Bring to a simmer, cover, and cook on low for 2-3 hours until tender.

Caramelized Onions and Mushrooms

    Cook Onions

    In a skillet, melt butter over medium heat. Add sliced onions and cook until they are caramelized, about 15-20 minutes.

    Add Mushrooms

    Add sliced mushrooms, salt, pepper, and thyme to the skillet. Cook until mushrooms are tender and caramelized, about 10 minutes.

Sunny Eggs

    Fry the Eggs

    In another skillet, melt butter over medium heat. Crack in eggs and cook until whites are set, yolks remain runny. Season with salt and pepper.

Assembly

    Plate the Dish

    On a plate, layer cooked rice, top with braised short ribs, spoon over caramelized onions and mushrooms, and finish with a sunny-side-up egg.
