    Prepare the batter

    In a large bowl, combine the blue crab meat, sweet corn, all-purpose flour, green onions, beaten eggs, milk, baking powder, salt, and black pepper. Mix until well combined.

    Fry the fritters

    Heat vegetable oil in a frying pan over medium heat. Drop spoonfuls of the batter into the hot oil and flatten slightly. Fry until golden brown, about 3-4 minutes per side. Remove and drain on paper towels.

Bacon Marmalade

    Cook the bacon

    In a skillet, cook the diced bacon over medium heat until crispy. Remove and set aside.

    Make the marmalade

    In the same skillet, add the chopped onion and cook until translucent. Stir in the bacon, brown sugar, apple cider vinegar, maple syrup, and black pepper. Cook until thickened, about 10 minutes.

Yuzu Kosho Tartar Sauce

    Prepare the sauce

    In a small bowl, combine mayonnaise, yuzu kosho, lemon juice, capers, and parsley. Mix well and set aside.

Assembly

    Plate the fritters, top with bacon marmalade, a dollop of yuzu kosho tartar sauce, and sprinkle with bonito flakes and crispy garlic.
